As a first pass at trying to make the defaults more coherent across classes, I'd suggest the following changes:
General:
Corner bottom left, icon: Hand of Salvation (overlaying the threat indicator seemed the most obvious place; primarily so multiple paladins don't go rushing to reduce the threat of someone who is about to pull off a tank without realising someone else has already done it)
Paladin:
Corner top left, text: time remaining on Beacon of Light (from what I can tell, Light's Beacon isn't used, only Beacon of Light)Corner top right, text: time remaining on Sacred Shield (I'm not sure if the two spells of this name can be split apart - one is a 30 (60 talented) second buff that absorbs damage, the other is a 6 second temporary buff that increases flash of light crit chance) (I'd also recommend having Sacred Shield and Sacred Shield-mine as separate, so you don't accidentally overwrite another paladin's buff)Side top, text: time remaining on the Flash of Light HoTIcon centre: Divine Intervention (when DI is up you're effectively OOC - it seems pointless to relegate this to some small corner/side indicator.)Corner bottom right: Forbearance (primarily so you don't waste time trying to cast Hand of Protection on someone who can't have it cast on them; I'm not sure if a square or an icon indicator would be more appropriate)
Priest:
Corner top left, text: renewSide-right, icon: Prayer of Mending (easiest way to show the number of charges remaining, I think)
Shaman:
Corner top left, text: RiptideCorner top right, icon: Earthshield
For priests and shaman, I am not sure but would maybe tie Inspiration and Ancestral Healing to Side-top, text - perhaps as a combined aura - so that healers can make sure it's always up on tanks.
I'm also inclined to think that PW:S can stay as a square indicator (it's likely to get eaten up quickly, so the time remaining isn't so important; I'm not sure if it's worth knowing the time remaining on weakened soul, tho', and if it'd look odd having a white square for PW:S but red text under it for WS.
Comments from a priest.
I usually keep PWS as a square, but change the color to yellow and change the color of WS to deep blue. No particular reason aside from reserving red for bad things like aggro.
I change PoM to an icon to see charges and time left (mostly time left)
I change the threat meter to something useful for me. I don't care about "tanking without highest threat" or "higher threat than tank without tanking". I care about "this guy is going to get slapped in the face by the mob any second". Accordingly I make red the two "tanking" statuses and lower the alpha for the "threat but not tanking" status.
I generally keep debuffs on the left and "good" statuses (PWS, PoM, etc.) on the right. The default now has disease and magic debuffs at the cener icon along with raid debuffs and a few other bits. I find this isn't that helpful in dungeons or fights where both diseases and magic debuffs play a large role. One necessarily has precedence over the other (though I can manipulate this) and I can't tell between them and a possibly non-dispellable raid debuff quickly. So I create smaller left justified icons and move diseases and other debuffs over there.
Also, why are "inner fire" and "DA" missing indicators on the default? I end up eliminating those all the time as well.
I don't want these to be defaults, necessarily. Not everyone needs icons for the stuff I do (and plenty of people want different setups. But some general comments on what is and isn't left to the class defaults.
For druids I have poisons and curses split to icons just left and right of the center icon. That way they are not confused with raid debuffs in the center and I can focus on what to cure first. Having those two icons as part of the setup is nice for sindragosa too since there is the stack thats going to kill you on the center icon and then the 2 debuffs causing stacks can be on the icons on either side.
I think we should make a blanket change here for everyone to have 3 icons in the middle. There will soon be multiple specs/setups so we can also provide toned down versions. I like the idea of consistency Nich is after though.
Post the exact colors you want for the defaults. Outside of druids and shamans I do not think anyone has posted stuff so it is currently just whatever I typed in.
A lot of the defaults for classes have more to do with what could be displayed or potentially useful rather than what should be displayed. So for instance rogues do not need an evasion indicator, but perhaps healers want it to show on the mitigation group that was just added.
iirc there was no official priest default. So feel free to be exact about what it should be. We will try to merge that into something consistent across the 4 heal classes + make the sensible changes you suggest. The working defaults will tend to have a bit more than needed because it is easier to delete stuff than add it + it educates people on what is possible. However the important stuff needs to stand out and less important stuff can be smaller & less noticeable.
By the way, I checked in some of the priest changes you suggested. (needs reset)
I use Grid for 9 different classes, and I prefer to have it set up exactly the same for every one of them. It's useful to see other player's heals / buffs / effects when leading a raid, even if they aren't your own. I will end up setting a single "account" layer setup once Grid2 is more stable, but I might suggest the following config which has worked exceptionally well for me across all classes.
In Grid1 I use GridIndicatorCornerPlus to have 4 square indicators in each corner for buffs, and GridIndicatorSideIcons for side debuffs. Obviously this setup is arbitrary, but this is how my Grid1 setup evolved.

side-top: Icon w/Debuff Type Curse
side-right: Icon w/Debuff Type Poison
side-bottom: Icon w/Debuff Type Magic
side-left: Icon w/Debuff Type Disease
center-icon: Grid2StatusRaidDebuff, which needs an option to disable all dispellable debuffs.
^ This solves all debuff display issues, and I find it's very useful to see all debuffs and to have them separated by type rather than all clumped in center icon where they conflict with undispellable Raid Debuffs
Top Left Corner for Threat effects to answer the question: "Who needs healing?"
top-left-corner: Square w/Threat, Divine Shield
top-left-corner-right: Neighboring Square w/Tank Mitigations (shield wall, barkskin, etc)

This may be a bit much for players who only play one class, but I find it indispensable knowledge to see other player's PoMs, PW:Shields, Earthshields, etc. It helps me to not only adjust my healing, but also to keep track of everything that's going on while leading raids. Some of the Square indicators may be better as Timer or other newfangled Grid2 features.
By the way, for hots I enabled showing hots as incoming heals. So you should be able to see them directly on the heals bar. I think this is even better than a count, although for raid leading a count is useful.
For curing stuff I also prefer to see them separated but I like having them be in the same location so the location maps to the key I press to cure. That way I do not have to learn new reflexes for the same indicator depending on class.
Looks like cataclysm will let healers cure 3 types each, but with a single spell. If that holds up a multi icon display would only tell you when someone has multiple afflictions to cure. mmm.

The majority of these suggestions are now in there. I only play a druid as heal class, so it is hard for me to evaluate all this. Please start a new ticket based on the existing defaults if there are additional changes needed.
