Already been in one of these situations? Don't be annoyed anymore, here is the solution!
Solution to chat loss annoyance
Elephant logs the chat for you in the background even when you get disconnected. It saves the WHISPER & BATTLE.NET, RAID, INSTANCE & BATTLEGROUND, PARTY, GUILD, SAY, YELL and OFFICER chats separately, but also all general chats (General, Trade, LocalDefense, ...), custom chats you are currently on, achievements, loots and finally system messages (auctions, rolls, server going down, ...). You can easily go through all these logs, thanks to a straightforward interface displaying all the access buttons on the right side of the main window. You can access the options of the addon by typing /elephant and also bind a key to pop up the addon.
Elephant gives you the ability to copy up to 100,000 (yes, 100k) characters of logs to another application. A BBCode feature is even included, letting you copy/paste a chat with colors and links to an item database in a very quick and simple way to your favorite forum.
This is THE addon that you should install if you want to never forget what somebody told you in game. Be a pro of managing hell tells, go peacefully AFK for a few minutes, or be an awesome role player. Elephant is also perfectly designed for Guild Leaders, Officers and Raid Leaders particularly because it restores the chats after you've been disconnected.
Main features
- Logs the chats in the background, with a limit of 10,000 lines for each chat (Blizzard's default is 161 lines for everything).
- Saves the logs when you log out or get disconnected.
- Display the chats with timestamps, or using your Prat settings if you have it installed.
- Copy the chat and paste it in other applications (BBCode supported!), up to 100,000 characters.
- Save the chat and combat log in two different files on your computer (using the default Blizzard logging system).
Other features
- Use filters to avoid logging some of the custom channels you join.
- Enable/disable logging for each chat separately.
- Item links in logs are displayed in their proper color and are clickable.
- Player names in the main window are clickable.

I just found this today while looking for something to replace "oma MultiChat", and it looks very nice.
A couple of things that would be great to see however are:
A log of system messages, mainly people logging on and off. I track DKP for my guild and often use the previous addon I mentioned to easily be able to look up when someone logged off if I missed it. Currently I need to keep both installed for that reason, though it would be great if I could only use this addon.
The ability to bind a key to open the window.
The combat log and ability to resize, which you've already got on your to do list would be great :)

Yes, at the moment it is "nearly" impossible to copy/paste the conversation or to save anything to a file, mainly for the reason that Blizzard that not allows the AddOns to open, create, write or do anything with files on your computer (I suppose it is for security reasons - try to imagine what would happen if an AddOn could read your personnal files) :/
Ok, if you really want to save the conversion NOW, just go in your SavedVariables folder and find your "ChatLog.lua" file there. You will be able to see all the things that ChatLog saved for you, but not in a copy/paste form, I know....
But I have a good news: the next improvement of ChatLog will be the possibility to copy/paste this text. I will add a button next to the "Enable/Disable" button that will pop up a new window where you will be able to highlight and copy the text. And then, just open a Notepad file and paste everything there ;)
Ok, so I have chatlog loaded, and almost never have a reason to dump any chat to text file. Here's my scenario: Nothing is set to "Log chat to a file". Have a conversation with someone. This conversation turns into something that I'd like to have a text log of! How do I export the conversation that has already taken place to text file?!?! If this isn't possible.. does that mean that I actually have to record to text file all the time? That doesn't seem to make sense to me.

OK! I have now a lot of time, so I just went all over the code this afternoon and I am now pleased to tell you that ChatLog 1.1 will be released in the next few days. Curse-Gaming's website is a little bit slow these days because of the patch 1.11, but when it will go better again I will upload the new screenshots, edit the changelog and finally upload the new release.
You will be able to: - Log any game chat (whisper, raid, party, guild, officer, yell, say), any general chat (trade, general, lookingforgroup, ...), and any custom channel you joined. - Choose the chat you want to see in a popup menu. - Read what you have recorded even if you are not on the channel anymore. - Delete the logs you don't want anymore.

Actually, I usually pay attention to the place i extract my addons. But for one time I forgot so... It is normal that the addon was not working ^^ fewww... It is ridiculous ^^
By the way, I am, as a lot of people here, very impatient to see the next version in which we will be able to have custom channels in our Chatlog Addon ! ;) So thank you for the time you use working on it ^^

An update of ChatLog for the patch 1.11 should come in the evening :)
I had a little time to work on the AddOn yesterday, and now it's quite smart :p You can select any channel you wish to log (including Officer, General & Custom chats), and the channels you are not on are displayed in grey (but you can still click on them in order to see what you logged before).
It's still not finished, but the next release (1.1) should be much better than the one that you have at the moment ;)

I'm thinking about a new way to log the chats for the release 1.1 or 1.2, and I think it will be much more efficient than now. But I will maybe have to go all over the code so it will take some time... In this new way of logging, there will be no more channels missing in ChatLog -it should normally log every single chat you are currently in in separate tabs. But you will still be able to disable them if you wish to.
I'll tell you more about it when I'll be able to check a few things ;p
Could you possibly combine party and guild logs and add a general,lookingforgroup and trade channels .... espically trade as with you clickable item links would make it so easy to find items for sale, maby even have it so you can enable disable certian loging per tab

It shouldn't be very difficult actually, I think I will add a popup window where you will be able to copy the current log.
What I need now is a little bit less of work ;p
making a copy of the chatlog?
I tried the feature for making a .txt of the chatlog, and it does a copy of ALL channels, including my FlagRSP channel spam which I would never want recorded or seen.
Wouldn't it be better to be able to simply select the text in the window and ctrl-c copy it ourselve? Or let us hit a button that copies out just the text that has already been logged for that channel. Like the displayed log for whispers only, or guild, or party, whatever.
This is the next improvement I will add to ChatLog: the possibility to log custom channels. For the moment, I have a very huge amount of work IRL so I won't be able to work on ChatLog for a few days. But when I will be done with it I'll add this feature.
What's the word on the possibility of adding a feature to log custom channels? I know in my guild, on an RP server, we have an Out Of Character channel, and it would be etrememly helpful to our Guild Leaders if they could log this channel as well.
